We start with our choice of suppliers. Canadian cheese, the focus of our company, supports Canadian farms and Canadian cheese artisans. How is that environmentally responsible? By supporting small farming and production, we also support sustainable farming practices, family farms and family traditions that will hopefully grow into Canadian traditions. When you purchase Canadian cheese you are supporting our people, our land and our way of life, and the products that you consume do not travel across oceans or around the world to your plate. We and you, by shoping with us, are voting with our dollars to support Canada and our local sustainable economy.
Here is an example of how Provincial Fine Foods supports environmental use of goods at hand and promotes the production of unique Canadian goods. Whey is a natural by-product of the cheesemaking process - it is the liquid that is left over after the milk curdles. For many cheesemakers it is just a waste by product that is discarded. But whey is full of nutritional value. In an effort to reduce waste output from the factory, Upper Canada Cheese Company was looking for a use for their whey. Provincial Fine Foods owner Cole Snell, put one and one together and now Upper Canada Cheese sells their excess whey to Cumbrae's Butcher who feeds it to their pigs and produces their signature delicious Niagara Gold whey fed pork products.

Finally on the shipping side, we have put quite a bit of effort into finding the most insulative and environmentally sensitive packaging. Instead of using styrofoam, which is not recyclable in many areas and also is has a large volume, we have found a new technology that uses an air pillow. It is shipped to us un-inflated saving on transportation energy expended and when you are through with it, you can deflate it again, reducing its volume by 80%. Additionally, we use unbleached paper for packing material which can be reused or recycled.
