Ontario Mac and Cheese
ingredients
3/4 c macaroni
1 tbsp olive oil
2 tbsp butter
1/2 tsp minced garlic
1/2 tbsp minced shallot
2 c heavy cream
1/2 c freshly grated Thunder Oak Gouda
1/4 freshly grated Lankaaster
pinch nutmeg
s&p to taste
directions
- Place cream in a heavy bottom sauce pot, bring to a boil, turn down & let reduce by 1/2
- In a separate pan sauté garlic & shallots
- Add the reduced cream to the garlic & shallots
- Whisk grated cheese into the cream
- Season with nutmeg, salt & pepper
